What is "natural" wine?
While there’s currently no legal definition, we define “natural” wine by a couple of standards - first, it must be farmed organically. Second, it must only have undergone minimal intervention from the winemaker.
To get nerdy about it, natural wine has little to no added sulfur, it isn’t fined or filtered, and it’s fermented exclusively using native yeasts.

Why do you only serve natural wine?
It’s a preference more than anything, for a style of wine but also for a particular ideology. It’s an embrace of - to borrow a phrase from natty wine superstar Aaron Ayscough - a “subculture of winemakers who advocate purity in winemaking as well as farming.”
